Third-party delivery is rent, and the tenant keeps your customer
Delivery platforms bring real volume and take a commission on every order, and the part that costs more than the percentage is the customer record: they have it and you do not. You cannot send a Tuesday offer or notice that somebody stopped coming. The apps are worth keeping for reach — but an order that could have been first-party pickup and was not is paid for twice, once in commission and once in a customer you never met.
