A wild & spontaneous ale project

Sour ales aged in oak, blended by hand.

We work slowly. Wort cools overnight in an open coolship, ferments with the yeast living in our walls, and rests in barrels for one to three years before we ever blend a single bottle.

Oak & Wild is a blendery, not a factory. We brew a turbid mash, cool it overnight in a shallow copper coolship open to the night air, and let the wild yeasts decide what happens next. Years later, we taste every barrel and blend by palate alone.
