The broth
Hashi Ramen is a small counter built around one obsession: broth. We roast and simmer pork bones for twenty hours until rich and milky, pull our noodles fresh each morning, and marinate eggs overnight. It's casual and a little cramped, exactly how a ramen bar should be.
